The most valuable resources I've found so far were written by an Australian consultant, Matt Allington.

Collect, Combine, and Transform Data Using Power Query in Excel and Power BI, 1st edition, Gil Raviv, 2018. Author is one of the developers of Power Query.  Dives deep in to Power Query.

M is for (Data) Monkey: A Guide to the M Language in Excel Power Query, Ken Puls & Miguel Escobar, 2016.  Provides tips for navigating through issues identified while using Power Query.  For experienced accounting and finance users.

Power Pivot and Power BI: The Excel User's Guide to DAX, Power Query, Power BI & Power Pivot in Excel 2010-2016, Second edition, Rob Collie & Avichai Singh, 2016. Colorful user manual to start working with DAX.

Power Query for Power BI and Excel, Chris Webb, 2014. Excel 2013 based. Materials are outdated but still have value.  2nd half focused on Power Query's M language.
